This course provides students with an integrated perspective on how to integrate marketing and consumer sciences with technological elements such as processing, logistics and information technology, and how to develop new food products in a chain-oriented approach. It also draws attention to changes in the environment of the food system, changes in food innovations such as changing consumer, growing concerns about food safety and new insights in human nutrition. Topics include changing markets, consumer perception regarding product quality, quality function distribution, use of new and improved technology in food production, logistics and information technology. With this information, it will help to design new products in the field of aquaculture processing and to design alternative products to the aquaculture sector. |
